Drink of the Month: April

Mother Nature has been giving us a hell of a hard time lately.  With little peeks of sunshine and warmer days, she keeps throwing snow at us in April and prolonging the winter blues.  With all this snow, I’ve decided that if mother nature isn’t going to bring us spring, we’re going to bring spring to ourselves.  And what better way to do that, then to treat ourselves to a light and refreshing spring cocktail that is just the thing you need to bring sunshine into your life

For Christmas, my friend at work got me Heritage Select Honey from Bumbleberry Farm and I have fallen in love with it.  Pure honey is one of the most delicious things in the whole wide world.  And though I had some great ideas for our drink of the month (be on the look out for a Strawberry Basil Mojito coming soon!), I just had to find a way to incorporate this fun.  I wanted to keep it light and simple.  With all the spring cleaning we’re supposed to be doing this time of year, we don’t need to over complicate our drinks.  You just need 4 ingredients and your all set!

Lemon Honey Bee
  • 3 oz. white rum
  • 2 tbsp. honey
  • 1 oz. water
  • 1 oz. lemon juice
  • 1 spring thyme, garnish

Instructions

  1. Place all of your ingredients in a small pot and heat over medium low heat until honey is dissolved. Remove from heat and let cool slightly.
  2. Pour into a cocktail shaker with ice and shake. Strain into a chilled cocktail glass and garnish with thyme sprig.

Want to take this drink up a notch?  After the honey has dissolved, add 1 sprig of thyme and let steep 5 minutes before removing sprig and shaken with ice.  Have a favorite spring drink?  Let us know below!  Enjoy!
